SUSHI!!

Bradley and I love to make sushi! We have it probably once a week! It's super easy and we personally think it is better than any sushi we've had out and about. We haven't gotten too fancy with it and tried raw stuff (too scary from the grocery!), but we always do a spicy crab mix. There's so much variety you can do with sushi so the sky is the limit!

We use Japanese mayo (which tastes to me more egg yolky than American mayo), Chili Garlic Sauce (spicy, spicy!) and shredded crab meat for our spicy crab mix.

Prepare your spicy crab mix first and let it refrigerate 30 mins - 1 hour prior to making the sushi.

I usually put a couple spoonfuls of mayo, one spoonful of chili garlic sauce, and enough shredded crab for 2 people. If you don't know by now, I hardly follow directions or measure anything!

Next step is to make the sushi rice. We use Nishiki sushi grade rice and follow the directions on the package. We let the sushi rice cook for 20 minutes and then immediately spread it across a flat surface to cool. While it is cooling, sprinkle rice vinegar and sugar over the rice. This helps give the sushi rice its proper stickiness and flavor. 


Place a sheet of roasted seaweed onto your bamboo sushi mat and begin to spread cooled rice across the seaweed. (Keep your hands and fingertips wet to make it easier to spread the rice)



Flip the rice over to where the seaweed is face up. In the middle of your sheet, put your crab mix.


 Then, surround your crab mix with whatever you like. We enjoy cream cheese and asparagus with ours. In this case, we just used cream cheese. Cut a strip of cream cheese and stretch it to the exact width of your sheet.


Now its time to roll your sushi! Take one end of your mat and roll over to the other side of the crab mix. Pull the mat back and repeat once more to make a roll.

Cutting the roll is the true trick. Use a serrated knife dipped in water and make a cut. Continue to dip the knife in water after every cut to make it easier.





Bradley really enjoys shrimp sauce back on top of the sushi. I'll give you recipe for the shrimp sauce at the bottom of this post.

Japanese Shrimp Sauce:                               makes 1.5 cups

1/3 cup mayo
1 tbsp. ketchup
3/4 - 1 tsp. hot mustard powder
1/2 tsp. sugar
1/2 tsp. garlic juice
1 tbsp. fresh ground ginger
dash paprika
salt and pepper to taste

Mix all ingredients together and refrigerate.

Bradley says he could eat the shrimp sauce on poop and it'd still be amazing. haha, I would not go that far, but it is very, very tasty! I know it is super hard to find these ingredients unless you live in a big city, so hopefully you are lucky enough to live in one! If not, next time you visit a large city, go by a Japanese market and get the stuff! I promise it is worth it! It is not only a cheap meal, but also quite simple.
